These knives are as they have always been. A thin sharp blade, either in stainless steel or in carbon steel. Carbon steel does tarnish when it comes into contact with moisture and can sometimes rust properly if you don't dry the knife. But in the end it always stays nice and sharp. Handle scales made of native woods, red beech or cherry are the first choice here.
There is the classic paring knife with a straight blade, the medium point with a rounded blade and of course the paring knife with the blade in the shape of a bird's beak.
