Katana-Moulin belongs to the series "Unique pieces from tradition", which comprises a small assortment of knives with a special history, shape and traditional handicraft processing. Katana-Moulin means "mill sword", a word and product creation that originates from our five-year exchange with the Japanese knife trade.

In Japan, there are many knife shapes with long blades, which are intended for cutting up various large fish. The fineness and at the same time enormous sharpness of these knives is surprising, the shape of the blades absolutely adapted to their function. This is also the case with the tuna knife "Shinomune", which was the inspiration for our ham and meat knife. The "Shinomune" looks very similar to the Japanese swords, the "Katana" - hence the name - and it cuts tuna like a sword. The elegant, slightly curved blade of the Katana-Moulin is made of first-class stainless steel and is full-ground and blue spiked in the finest grinding craft. It is slightly elastic ground, which makes it particularly suitable for cutting ham or salmon.

The handle is made of plum wood. The wood of the plum tree is hard, knotty and often interspersed with branches. It is very dense and very resistant. Its beautiful, richly nuanced grain ranges from light brown-pink to dark brown-violet. A wood of exceptional character, beauty and high utility value.
